Lemon Snickerdoodles
These lemon snickerdoodles offer a refreshing citrus twist on the classic cinnamon-sugar cookie.

Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.

In a medium bowl, whisk together flour, cream of tartar, baking soda, and salt.

In a large bowl, beat butter and sugar together until light and fluffy. Add lemon zest and beat for another minute.

Beat in eggs one at a time, then add lemon juice and vanilla.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

In a small bowl, mix 1/4 cup sugar and 1 tablespoon lemon zest. Shape dough into 1-inch balls and roll in the lemon-sugar mixture.
